Beef Shares Explained: How Quarter, Half, and Whole Beef Purchases Work (And Why They Save You Money)

Hoggan Ranch – Premium Angus Beef Delivered Directly to Your Family

Buying beef by the share—quarter, half, or whole—is one of the best ways to get premium Angus beef for an unbeatable price. But if you’ve never purchased a beef share before, the process can feel confusing. Terms like hanging weight, yield, and cut sheet might be new, and most websites don’t explain them clearly.

At Hoggan Ranch, we’ve helped hundreds of first-time buyers understand exactly what they’re getting. This guide breaks down everything you need to know so you can buy with confidence.

What Is a Beef Share?

A beef share simply means you’re buying a portion of an animal—either a quarter, half, or whole—instead of individual grocery-store cuts.

That means:

  • More steak for less money

  • Custom-cut packages the way you want them

  • A full freezer of premium Angus beef

  • One purchase that lasts your family months or even a full year

How the Process Works (Simple & Straightforward)

1. Choose Your Share Size

We offer:

  • Quarter Beef – Best for smaller families or limited freezer space

  • Half Beef – A perfect balance of value and volume (our most popular)

  • Whole Beef – Best overall price per pound & maximum customization

2. Place Your Deposit

Deposits secure your spot with the butcher:

  • $300 – Quarter

  • $600 – Half

  • $950 – Whole

3. Choose Grain-Finished or Grass-Finished

  • Grain-Finished: $6.50/lb quarter • $6.35/lb half • $6.25/lb whole

  • Grass-Finished: $7.25/lb (any share size)

Both options are 100% Angus, raised in Southern Idaho and processed at a USDA-inspected facility.

4. We Deliver to Cut & Wrap

Your beef goes to the butcher where it is:

  • Dry aged

  • Professionally cut

  • Vacuum sealed or wrapped

  • Labeled and boxed for easy freezer storage

Processing takes 3–4 weeks.

5. Pay the Final Balance & Pick Up Your Beef

Pickup points: Logan, UT and Saratoga Springs, UT.

Understanding Weights: Hanging Weight vs. Take-Home Weight

This is the part that most people want explained the clearest:

Hanging Weight

The rancher and butcher price your beef by hanging weight—the weight of the animal after it is field dressed.
This is the weight your pricing is based on.

Take-Home Weight

After the butcher trims, debones, and cuts your beef, you take home 60–70% of the hanging weight.

Example for a half beef:

  • Hanging weight: ~350 lbs

  • Take-home: 210–245 lbs of packaged beef

This includes steaks, roasts, ground beef, stew meat, and optional items like soup bones or organ meat.

What Comes in a Beef Share?

Your exact cuts depend on your cut sheet, but here’s the typical breakdown:

Quarter Beef (Most Common Cuts)

  • ~25% Steaks – Ribeye, T-Bone, Tenderloin, Sirloin

  • ~25% Roasts – Chuck, Arm, Rump

  • ~50% Ground Beef

Half & Whole Beef

You get every cut from the animal, including:

  • Ribeyes

  • T-Bones / New York / Tenderloin

  • Sirloin

  • Chuck roasts

  • Brisket

  • Short ribs

  • Stew meat

  • 1 lb ground beef packages

  • And optional: soup bones, marrow bones, liver, heart, tongue, suet

Why Buying a Beef Share Saves You Money

Even after processing fees, your average take-home cost per pound is usually far lower than grocery store prices for equivalent quality.

Customers consistently tell us:

  • “We saved hundreds of dollars.”

  • “The quality is night-and-day compared to store-bought.”

  • “We love opening our freezer and having everything ready for months.”

The larger the share, the better the per-pound savings, which is why half and whole beefs are the best value.

How Much Freezer Space Do You Need?

General rule of thumb:

  • Quarter Beef: 4–5 cubic feet

  • Half Beef: 8–10 cubic feet

  • Whole Beef: 16–20 cubic feet

A standard upright or chest freezer easily handles a half beef.

Is a Beef Share Right for Your Family?

A beef share is perfect if you:

✓ Want exceptional Angus beef below grocery-store prices
✓ Like saving money by buying in bulk
✓ Prefer having a freezer stocked for months
✓ Want custom cuts made exactly your way
✓ Want to support a local rancher, not a feedlot supply chain

If you go through 1–2 lbs of ground beef per week, a quarter beef is great.
If you grill steaks often or have a family, a half beef is perfect.
If you want maximum value and control, go with the whole.
